Everything that is wonderful about coffee is condensed down to an ounce or so of golden brown concentrated goodness. Small but good.

Espresso is great all on it’s own but here in North America it serves more as a base for other coffee flavored drinks.

When choosing beans stick with the Arabica variety with some robusto mixed in for a heavier crema. Buy your beans roasted to a dark full city roast. Too light of a roast and you won’t get the full flavor, too dark and it will taste burnt and the oils will tend to clog up your espresso machines filter.

Grind your beans just before brewing to ensure that you get the fullest possible flavor out of them. Do not use a blade grinder. Go with a Burr grinder to get a more uniform grind. You will have to fiddle with the setting on your particular grinder to get the right grind size to get your espresso machines coffee as close to perfection as you can.

A semi automatic is a good place to start. The vast majority of consumer grade espresso machines fall into this category. Keep in mind that there really are only a few simple things that it needs to do.

Look at the switches. There only needs to be three. Power, brew and foam. There should be a control to send the steam to the frother nozzle which should be movable. The Portafilter should fit snugly into the diffuser head. There should be good access to clean the drain. Make sure the reservoir is large enough and easy to fill.

Then there are the Super Automatic espresso machines. These machines are designed to do it all. Grind the beans, tamp the coffee, fill the cup, supply several types of foam or steamed milk, clean up the mess and tell you when it needs something, water, beans, cleaning all at the push of a button. One touch espresso. It doesn’t get any easier than this.

The hands is all about the Barista and the skill involved in making the perfect shot. This involves getting the amount of coffee right, tamping the coffee correctly and on a manual machine using the required force to push the water through the coffee. You may think a manual machine is the lower end but think again. Not only are high end manuals very expensive but in the hands of a skilled barista you will get perfection here. The best shots are pulled manually.
